Vanilla Cherry Oats
With the colder weather approaching, the mornings call for something warm and comforting for breakfast. These vanilla cherry oats are a delicious way to bring some of Summer's frozen berries into the Fall days.
Ingredients:
For the stewed cherries:
½ lb fresh or frozen cherries
1 tsp vanilla bean paste
1 tbsp maple syrup
For the oats:
1 cup Old-Fashioned oats
1 cup whole milk
½ cup water
1 tsp vanilla extract
½ tsp ground cinnamon
pinch of salt
For serving (all optional):
2 tbsp plain yogurt
drizzle of maple syrup
crushed pistachios
Method:
In a small pot, add the cherries, vanilla bean paste, and maple syrup, and set it to low heat with the lid on. Allow to stew for about 15 minutes.
In a separate pot, add all of the ingredients for the oats and simmer on low heat for 10-15 minutes with the lid on. I like my oats a little runny, so add a splash more milk at the end.
Scoop the oats into a bowl, then spoon the stewed cherries on top along with the yogurt, maple syrup, and pistachios. Enjoy!
