This is an extremely simple recipe, but it elevates your rice to a whole new level. It’s also a good way to use up any leftover parsley you may have lying around. It pairs well with any dish, the same way that you’d serve plain rice.

Ingredients:

  • 1 cup jasmine rice

  • 1 ¼ cup water

  • ½ tsp salt

  • ¼ - ½ cup chopped fresh parsley

  • ½ tsp garlic powder

  • 2 tbsp lemon juice

  • 1 tbsp butter


Method:

  1. Add the jasmine rice to a colander and rinse it with cold water until the water runs clear.

  2. Place the rinsed rice into a pot along with 1 ¼ cups of cold water and ½ tsp of salt.

  3. Bring the pot to a boil over high heat, with the lid on. Once it starts boiling, crack the lid so that it doesn’t boil over, lower the heat to low and leave it to boil for 12-15 minutes.

  4. Once all of the water has been soaked up, switch the stove off and place the lid on fully again. Allow the rice to steam for 10 minutes.

  5. Use a fork to fluff the rice, then add in the parsley, garlic powder, lemon juice, and butter, and stir through while the rice is still hot.

  6. Serve with your favourite dish. Enjoy!
