Mexican Hot Chocolate Brownies
What’s better than fudgy chocolate brownies? A Mexican hot chocolate spiced version. These are chewy, rich, and beautifully spiced with cinnamon. They are studded with chocolate chips, have a delicate crust on the outside, and have crispy edges.
Ingredients:
125g butter (softened)
½ cup white sugar
½ cup light brown sugar
2 eggs
1 teaspoon vanilla bean paste
1/2 cup cocoa powder
¼ teaspoon salt
1 tsp ground cinnamon
a pinch of cayenne pepper
½ cup flour
½ cup semi-sweet chocolate chips
Method:
Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit). Grease a square baking tin.
In a large bowl, add the butter and sugar and whisk until light and fluffy. Add the vanilla bean paste and the eggs one at a time and whisk them into the butter.
Sift in the cocoa powder, salt, cinnamon, cayenne pepper, and flour. Mix until well combined, and then fold in the chocolate chips.
Pour the batter into a baking tin, then bake for 20 minutes. The top will have a delicate crust, and the inside will be fudgy and chewy. Leave to cool for 10 minutes before cutting into squares.
Serve warm as is or with a scoop of vanilla ice cream. Enjoy!
