Mango Avocado Pico De Gallo
This chunky pico de gallo is fresh, sweet, and makes the perfect side for your tacos. I love to serve a big helping of this next to my birria tacos or to scoop up with some nachos. It brightens any dish and is a great spring or summer side dish.
Ingredients:
1 ripe mango
1 ripe avocado
½ a large red onion
1 large tomato
1 small bunch mixed herbs (I used basil, dill, and cilantro)
Juice from 1 lime
2 tbsp olive oil
Salt and pepper to season
Method:
Peel the mango and dice the flesh into small cubes. Cut the tomato and red onion into small cubes and place the mango, red onion, and tomato in a bowl.
Cut the avocado in half and cut the flesh into cubes. Scoop the flesh of the avocado into the bowl.
Chop up the herbs and then add the herbs, lime juice, and olive oil to the bowl. Season with salt and pepper to taste, then stir well.
Serve with corn nachos or as a side with your favourite tacos. Enjoy!
