Lemon Charred Asparagus

This is perfect for a refreshing and delicious side dish. Asparagus is one of my favourite veg and this is such a simple way to prepare them. The light charring compliments them beautifully and the lemon gives it such a vibrant, zesty flavour.


Ingredients:

  • 600g asparagus

  • 2 tsp butter or ghee

  • Juice from 1/2 a lemon

  • 2 tbsp olive oil

  • 1/2 tsp salt

  • 1/4 tsp pepper

  • Asiago cheese (optional)

  • Pomegranate gems (optional)


Method:

  1. Wash the asparagus and cut off the bottom ends.

  2. Bring a large pan to high heat, then place the asparagus inside the pan (without any oil or butter). Frying them dry like this will give them the light char that we are looking for.

  3. Toss the asparagus every now and again to ensure they char evenly. Cook for about 15 minutes or until evenly lightly charred.

  4. Add the butter and a pinch of salt to the pan and toss to coat, then cook for another 10 minutes until the asparagus is tender and cooked through.

  5. In a small bowl, add the lemon juice, olive oil, salt, and pepper, then whisk with a fork until emulsified.

  6. To plate, place the asparagus on a serving dish, drizzle with the lemon sauce, and garnish with lemons, asiago cheese, and pomegranates. Enjoy!
