Bagels From Scratch

Skip buying bagels from the store (which are packed with preservatives and additives) and make them at home instead. They are easy to make, super delicious, and are perfect for your next brunch.


Ingredients:

  • 360ml lukewarm water

  • 3 tsp instant yeast

  • 520g all purpose flour

  • 1 tsp salt

  • 1 tbsp sugar

  • 2 tbsp maple syrup

  • 1 large egg (whisked for the eggwash)

  • sesame seeds to sprinkle (optional)


Method:

  1. In a large bowl, add the water and instant yeast, and stir until dissolved, then leave for 5 minutes to bloom.

  2. Add the flour, salt, and sugar to the water, and use a wooden spoon to mix until combined. Then use your hands to knead the dough until smooth.

  3. Once the dough is smooth and soft, place it in a greased bowl and cover the bowl with a cloth. Then place in a warm spot to rise for 1 hour.

  4. Once the dough has risen, tip it out onto a floured surface, then divide the dough into pieces.

  5. Line a baking tray with baking paper, then start making holes in the center of each of the dough pieces, and then place the bagels onto the lined tray. Make the holes fairly wide because the dough expands when in the water bath. Cover the bagels with a cloth and allow to rise again for 10 minutes.

  6. In the meantime, preheat the oven to 200 degrees Celsius (392 Fahrenheit).

  7. Prepare the water bath by filling a pot 2/3 full of hot water. Add the maple syrup and stir well, then bring to a simmer.

  8. Place the bagels 2-3 at a time (depending on how big your pot is) in the boiling water and cook for 1 minute on each side.

  9. Once boiled, place the bagels on a lined baking tray and brush the tops with the eggwash. Sprinkle with sesame seeds if you are using.

  10. Bake for 20 minutes or until the bagels are golden.

  11. Serve with creamcheese, ham, tomatoes, cucumber, or toppings of your choice. Enjoy!
